Balsamic Roasted Eggplant. Did someone say yum?


5-6 medium sized Japanese eggplants, cut into 1-inch rounds
2 TBSP balsamic vinegar
1 tsp dijon mustard
1 tsp fresh thyme leaves
2 cloves garlic, finely minced
1/3 to 1/2 cup extra virgin olive oil
1/4 tsp sugar
Salt and Pepper to Taste
